Yours looks outstanding though the absence of pork is always a tragedy.

One dozen but part of the tradition is that my friends don't have to cook on Boxing Day
In reply to Commie
No pig - no red meat

By the way, is the rupununi similar to bammy?
In reply to Chrissy

"Sliced smoked turkey and avocado sprinkled with chopped cilantro - with tamarind sauce"
Interesting, encouraging item. My mouth is watering at the combination of avocado, cilantro and tamarind. You always inspire: A culinary blend i must try. Do you add some lemon with the cilantro to open it up?
Well done sis.
In reply to doosra
I find it hard to believe that was the actual method Ameridians used.
In reply to black
was?
In reply to doosra
I guess they still do it.
In reply to pelon

In reply to Chrissy
You had me confused there for a moment, Prof.
Is that just a spin on the words Chrissy/Christmas?

In reply to Chrissy
Actually, I was suppose to come there next month...My nephew's 13th birthday and the family is going to celebrate it there. But things came up and I can't make that anymore.
I think I'm getting more picky of what I'm eating these days. I went to a party last night, and the variety of foods that was there. B4 I would take everything and stuff myself, but I only took alittle of shrimp choumain and chicken fried rice and I was good.
btw, they had pork, but I pass on it.
In reply to Chrissy
I see your cooking expertise is on par with your goatmouthery abilities, congrats!!
Allyuh fellas have hand out open rhel fast boi, we now know who cyah cook in here
In reply to Yamfoot
You're allowed to eat everything on this one day
In reply to tops
Yep - I pass on a lot of food these days. I stay away from the fried stuff most of the time.
In reply to Chrissy
One of the thing though...I get so much pepperpot and bread that I end up with more than the ppl who make it.
How many guests? As a Christian Democratic socialist, I would have members of the proletariat over!
Yuh making up for last year as nothing was posted, would love to give this some mileage if time permits!
In reply to XDFIX
As a what?
In reply to Chrissy
Aren't you a heathen? Wah de rass yuh a tork about 'Christmas day'?
In reply to Larr Pullo
My friends and I gather and enjoy a tradition. Stewwwwwwwwwwps.
Ok here goes.
First I have alot of food this year because I have a set of people coming as usual and in a couple cases it is pretty poignant. Yesterday I met two moms of friends of mines who live overseas. I met both by coincidence whilst taking a rare walk in town and both were spending their day today alone as the men have passed on. I consider that pretty criminal so invited both. Made the heart feel good and the smiles on their faces will likely make up for all bad vibes ever.
No fish this year as my VIP guest is doing a monster red snapper for New Years eve.
Boxing Day is a traditional Callaloo Soup with Smoked Pork and another batch with Smoked Chicken for the non pig eating deluded mob. There is also a veggie callaloo with pumpkin but my Veggie friends usually end up eating the smoked pork version. EVERY YEAR !
Starters
Lobster in garlic butter served with plantain chips
Ham, twice cooked, and glazed with mustard and honey and stuffed with cloves and garlic.
Watercress and tomato salad with a home made lemon relish
Fried eggs (cmon...ham needs eggs)
Hot local bread
Main
Roast pork with fennel and brandy, with roast potatoes on the side
Local Turkey with yam and liver stuffing (I really should start taking pictures of this). The liver is actually local goat liver which is incredible
Crayfish cooked in coconut and curry with roast breadfruit on the side
Provision plate with green bananas, swamp dasheen, white and yellow yam and kush kush (purple yams I believe you call those in English)
Steamed okras
Avocado
Stir fried chinese cabbage
Stir fried carrots and spinach
Eggplant stewed with tomatoes and cumin
Egg fried rice
Pasta salad
Yam Pie (the left over stuffing)
Dessert
We have 7 frigging fruit cakes. I have a special VIP guest who can make the best cakes in the world. To emphasize the trouble we are in the cakes are finished with honey poured over them.
Ice Cream (Vanilla)
Pineapple and watermelon
The drinks dont bear describing except for one. My VIP guest eggnog.
In reply to Commie
Ah stop at de roast breadfruit. Since you have no lion fish ah go have to get some grilled tomorrow
In reply to Maispwi
