...how Trevor Hart got the secret recipe


THERE is a man selling doubles out of the back of a Mercedes-Benz near the village of Buccament on the big island in St Vincent and the Grenadines.

His stall is roadside on one of the few pieces of flat land on that jagged, serpentine place. Many of his customers are first timers to the curried chick peas sandwich that so puzzled international foodist Anthony Bourdain during his visit to Trinidad last year. But from eyewitness reports (mine), it appears the Vincentians and their visitors love it.

How Trevor Hart ended up with his Indian bara business in a place better known for its fish, provisions, breadfruit and mutton is an unlikely journey.

Equally amazing is where he learned the art of the perfect doubles – and it happens to be from a direct descendant of the man who invented Trinidad's number one street food.

I went to this T&T roti shop in BK and I had heard so much about doubles, I decided to order a few, it did not taste good, too much grease.Heart attack.

Dey shopping fuh grease wholesale in de same place ,wha yuh expect..

Is like a TCB or Carefree curls Dougla and a real Dougla,my head have no grease and de curls rel bouncy and shiny right now as I type.

Yes boy!!! One of the best,right by the lil short part of street in between promenade..he wraps a lil clumsy but man that thing is good food...right where all dem Guyanese sellin 'hot daag' an ting and makin one set ah ole noise..

Of course. Used to go by him for a lil cheap lunch wen a was working tong. Also used to hit chatterbox for breakfast.

It hav a crew who doz sell 6th Avenue in barataria ok afternoons. One of my favorites. Spend plenty after school money there

Roundabout was always a legendary one,still there but I don't think it's the same actual people,but close relatives,not bad now but not as good as their family before,I more or less grew up going there,all the way from being taken by an adult to going myself after I got my dp at 17 to big man now and then..and it remains the same to this day,2 everyting, slight (pepper) and a Apple J.. cool

Guyanese tekking over the food sector in TDad? A very good fren of mine, who is also well traveled, seh she has eaten all over the region and GT food is the best. Is true dat, bhai?
