Gwine kill time now, hanging out in the Rum Shop & the Skylarking Room for 1pm to get here...then an iced cold coors light; wuk dung dhall puri (bought 20 yesterday at Sybills; wife simply doesnt make them...she says run guh buy that!) & curried duck. Watch westerns, Forensic Files or those similar tv episodes & a bit of (lemme get them vex) Fox News!

Started having my pepperpot 2 days ago. Another masterpiece by the wife. Some extra wiriwiri works wonders!
The garlic pork was really good too. The ginger beer and black cake should be ready today.

Why is it, that the 'older' the Pepperpot, the better it tastes!? Any chefs? Or chemistry major? Anyway, I really enjoyed my breakfast this morning.

Amerindian technology, bro - the same people who brought you corn, peanuts, potatoes, sweet potatoes, tomatoes, cassava, bitter cassava, tobacco, coca, etc. It is a mystery how they figured out that boiling the bitter cassava, containing lethal amounts of cyanide, until it reduces to casareep, will produce an edible and useful substance.
Cassareep has antiseptic properties, which probably why it preserves cooked meat. As for the taste - that's another matter. What a delight!
Amerindians and others have been able to keep pots going for years, with beat being slowed cooked in cassareep, with wiriwiri peppers for flavor ("pepperpot"). The ability to preserve meat in pepperpot for long periods may have also helped the Caribs to conquer the Caribbean islands and the northern coast of South America, before Europeans arrived.
Not bad, for a bunch of guys living simple lives in the jungle.
