Lovers of Jamaican Callaloo

Oilah 2018-02-15 17:48:40

I love all de leafy green veggies but the way Callaloo is done in Jamaica is my favorite. Trying mi hand at cooking some and got a few questions. With or without saltfish...with or without coconut milk. Also...that peeling de skin off de stems...is there an easy way to do it or avoid it altogether?

I never use salt fish but a lil snapper is fine. Love it wid coconut milk -lil tomato, onion. thyme and hot pepper.

I like saltfish with potato/breadfruit balls but I prefer fresh fish wid my callaloo.

Not like spinach, bro ...cyaan eat it raw, got to cook it down.

Onion, fresh garlic, scallion, shredded carrots, cauliflower, and some scotchie ...gats to put een some scotchie. It works w/o coconut milk but definitely taste better with.

In reply to imusicI didn't know that too, when I saw it in a tin I bought. It said product of Jamaica with the tin displaying the Jam colours. Here's the problem,it was spinach and not the dasheen leaves that we use in TT,i think the Grenadians make it just like we do.

Careful now-- callaloo is not spinach. In some foreign circles it's referred to as Jamaican spinach but even this I don't like. Callaloo may be of the same family but is distinct; for one instance, it isn't slimy like spinach when cooked. It is no more like spinach than kale is.

As Doosie implied above, there is a callaloo dish (Trinidad) and a callaloo plant (Jamaica). The T&T dish involves dasheen leaves and not the callaloo plant. In Ja we do not eat coco, dasheen or badu leaves, just the root (tuber?).
