Some Trini Cooking recipes
Hope no one got killed eating all this delicious food. From choking!!

Moruga Pong Plantain
6 really ripe Plantain (black)
3 cloves garlic minced
Salt to taste
I tablespoon butter
2 tbsps olive oil
2 tablespoons black pepper
Boil plantains until tender, about 10 to 15 minutes.
Skin cracks
Large container add butter and Olive oil
Add skinless plantains and mash with a potato masher.
Add garlic, black pepper and salt, stir to combine.
Mix well.
Then make in shape as one is about to bake bread.
Take the finished product and wrap in Foil.
Leave in refrigerator for about 30 mins.
Slice and serve with curries or stews.
I have used the above over time, one can make adjustments
to one's liking.

I love baigan choka, made with bits of garlic placed in the slits (as in your recipe) and then roasted.
Baigan in Guyana is baigan or boulanger.

Not yet. I will propose it to the wife, but it might cost me!!!

Guyanese make two somewhat similar (I think) plantain dishes: foofoo and kangkee. I don't think we put garlic in either, but I like garlic overall. Chrissy or some other Guyanese might know if Pong Plantain (Pounded Plantain?) is similar to either foofoo or kangkee.
