Followed a recipe i found online. Turned out great. First time i didnt use enough oil or baking powder (misread the ingredient quantity) so it had a johnny cake density. This time i used the correct amt and added some baking soda to help woth the second rise. I also used more oil.
I will say i think its almost like Hellshire festival (not as sweet and wihout the cornmeal). Similar texture but a bit airier. Its quite delicious. Had it with tinned mackerel (no shark and i was too lazy to pick the damned saltfish lol).

Have some good red peas rice on the fire right now. Oven jerking some legs and thighs and making a nice salad with avocado and June plum - wid green mango salad dressing

Not bad. A lot of rain but we have to cope. I am just glad that constant spring is sort of in a rain shadow. So we dont get the full force of it.

My niece send me recipe yesterday on Whats app, wanted to tease me, as she know we both fool around in the kitchen, a few minutes later there was a platter of bakes, which I thin was bajan muffins.
My recollection of bakes there did not rise.
Do you have to knead the ingredients when making Muffins/Fry Dumplings?

Bakes puff up when made. Yes u knead fried dumpling dough. Not muffin dough. Muffin is a batter that you mix.

This is the recipe I was sent yesterday.
Ingredients
2 cups all purpose flour
2 1/2 teaspoons baking powder
1/2 cup sugar
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 teaspoon vanilla/almond essence
1 - 1 1/2 cups water
Vegetable/Corn Oil (for frying)
Directions
Combine all dry ingredients in a mixing bowl.
Add essence and water gradually to create a stiff consistency.
Heat the oil in a frying pan.
When hot, drop spoonfuls of the mixture into the oil and allow to fry on each side, until each side is golden brown.
Remove from oil and allow to drain and cool.
Enjoy your Bajan bakes!
My brother in law who is Antiguan, left me a zip lock bag filled with batter to make Fry Dumplins, only thing he wanted me to add, was grated coconut, I made a mess of the batter, after not finding any grated coconut in the store, I used shredded one.
What a mistake.
