Tuna is so delicate a fish, anything over medium rare is killing that delicacy.

I generally dont buy fast food, but I have an extra aversion to subway.

Yep!
When I visited my son in Okinawa, my daughter, who had lived in Japan for a year, recommended that I order the raw tuna at this fancy restaurant. I was sceptical, because I never liked tinned tuna when I ate it in the West.
But it was delicious! It was brilliantly prepared and tasted wonderful.
